For the Buns:
4 brioche burger buns
1 cup tomato sauce
1 cup shredded mozzarella cheese
¼ cup grated Parmesan
¼ cup finely chopped pepperoni
Garlic Custard:
1 stick unsalted butter
1 egg
2 tbsp grated garlic
¼ cup minced parsley
2 tsp Italian seasoning
1 tbsp sugar
1 tsp salt
Cream Cheese Filling:
8 oz cream cheese, softened
2 tbsp sugar
2 tbsp heavy cream
Directions
Step 1
Preheat oven to 350°F (175°C).
Step 2
Prepare the buns: Make 3 slices into each brioche bun, being careful not to cut all the way through—the base should stay intact.
Step 3
Make the cream cheese filling: Mix softened cream cheese with sugar and heavy cream until smooth. Transfer to a piping bag or zip-top bag.
Step 4
Fill the buns: In each slit, add ~2 tbsp mozzarella and ~2 tbsp tomato sauce. Pipe cream cheese filling on top.
Step 5
Make the garlic custard: Melt butter, then whisk in egg, garlic, parsley, Italian seasoning, sugar, and salt until fully combined.
Step 6
Dunk the filled buns into the garlic custard, making sure all sides are fully coated.
Step 7
Top with grated Parmesan and chopped pepperoni.
Step 8
Bake for 15 minutes until golden and bubbling.
Step 9
Cool for 5–10 minutes before serving. Dig in!
