Crispy Potatoes w/ Gochujang Dip

Crispy, cheesy, golden-edged potatoes with a spicy-savory dipping sauce that hits all the right notes. These are the kind of snacky sides that disappear before they hit the table. Bonus: the gochujang dip doubles as a top-tier sandwich spread.

What You'll Need

Ingredients

For the Potatoes

  • 3 Yukon gold potatoes, peeled

  • 1 cup shredded Parmesan

  • 1 cup shredded Gruyère

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ¼ teaspoon cayenne


For the Gochujang Dip

  • 3 tablespoons mayonnaise

  • 1 tablespoon gochujang

  • 1 tablespoon ketchup

  • 1 teaspoon sesame oil

  • 1 teaspoon garlic, minced

  • Salt and pepper, to taste


To Serve

  • Chopped chives

  • Chili threads (optional)


Directions

Step 1

Preheat the oven to 400°F.

Step 2

Peel the potatoes and slice thinly using a mandoline.

Step 3

Parboil the potato slices in a pot of salted boiling water for 2 minutes. Drain and pat dry thoroughly—crispy potatoes need zero excess moisture.

Step 4

On a  large griddle pan  lined with parchment, evenly sprinkle the Parmesan and Gruyère to form a cheesy base. Layer the potato slices on top, overlapping slightly.

Step 5

Season with garlic powder, onion powder, and cayenne. Bake for 20 minutes, or until golden brown and crisp around the edges. Keep an eye on the cheese to prevent burning.

Step 6

While the potatoes bake, make the dip. In a small bowl, mix together the mayonnaise, gochujang, ketchup, sesame oil, and garlic. Season with salt and pepper to taste.

Step 7

Once out of the oven, crack the cheesy potato slab into rustic pieces. Plate and top with chopped chives and chili threads if using. Serve with the gochujang dip on the side.
