A salad so pretty it’s almost too beautiful to eat—almost. This mosaic-style salad layers juicy summer fruit, crunchy veg, and creamy feta in a checkerboard that’s as satisfying to assemble as it is to eat. Finish with olive oil, balsamic, flaky salt, and a shower of fresh herbs.

Ingredients

  • Seasonal fruits (e.g. peaches, strawberries, melon, mango)

  • Crisp vegetables (e.g. cucumber, radish, cherry tomatoes)

  • Feta cheese, cubed

  • Olive oil

  • Balsamic vinegar

  • Flaky salt

  • Fresh herbs (e.g. mint, basil, dill)

  • Optional: chili flakes or honey for drizzle

Directions

Step 1

Cut your seasonal fruits and vegetables into uniform bite-sized pieces or cubes.

Step 2

Cube the feta cheese to match the size of your chopped produce.

Step 3

On a large serving tray, layer the fruits, vegetables, and cheese in a checkerboard or grid-style layout.

Step 4

Drizzle with olive oil and balsamic vinegar.

Step 5

Sprinkle with flaky salt and, if desired, a touch of chili flakes or honey.

Step 6

Finish with chopped fresh herbs.

Step 7
