For the Spread
½ cup mayonnaise
3 tablespoons ketchup
2 tablespoons sweet pickle relish
½ teaspoon white vinegar
½ teaspoon granulated sugar
For the Caramelized Onions
2 tablespoons unsalted butter
2 tablespoons vegetable oil
2 large yellow onions, finely chopped
½ teaspoon kosher salt
For the Burgers
1 pound ground beef (80% lean)
Salt and freshly ground black pepper
4 teaspoons yellow mustard
4 slices American cheese
4 soft hamburger buns
2 tablespoons unsalted butter, softened
1 cup shredded iceberg lettuce
4 slices ripe tomato
Dill pickle chips
Directions
Prepare the Spread:
Step 1
In a bowl, combine mayonnaise, ketchup, sweet pickle relish, white vinegar, and sugar. Mix well, cover, and refrigerate until needed.
Caramelize the Onions:
Step 2
Heat butter and vegetable oil in a skillet over medium heat. Add chopped onions and salt. Cook, stirring occasionally, until onions are deeply browned and caramelized, about 30 minutes. If onions start to burn, reduce heat and add a splash of water.
Prepare the Buns:

Spread softened butter on the cut sides of the buns. Toast them on a large griddle pan over medium heat until golden brown. Set aside.
Form and Cook the Patties:

Divide ground beef into 8 equal portions and shape them into thin patties slightly wider than the buns. Season both sides with salt and pepper.

Heat a large skillet over medium-high heat. Place patties on the hot surface. Immediately spread 1 teaspoon of yellow mustard on the uncooked side of each patty.

Cook for about 2 minutes, then flip so the mustard side is down. Place a slice of American cheese on each patty and cook for another minute until cheese melts.
Assemble the Burgers:

Spread a generous amount of the prepared spread on the bottom half of each toasted bun.

Layer with pickle chips, a slice of tomato, and shredded lettuce.

Place one cheese-topped patty over the lettuce, add a spoonful of caramelized onions, then top with a second cheese-topped patty.

Cap with the top half of the bun.
