Buffalo Wings

Like many good things in life, buffalo wings can be traced back to Black cooks in—you guessed it—Buffalo, New York. What used to be considered less desirable parts of the chicken have become the calling card of big sporting events, casual bar fare, and big gatherings. They’re so popular that what used to be a reliable affordable cut became so in demand that some bars had to stop serving them, lest customers put them out of business on dollar wing night. Lucky for you, supply chains have evened out, and you can make crowd-worthy wings right at home, without even turning on your oven or messing with an intimidating vat of frying oil. Using the Wonder Oven’s air frying feature, you can get juicy, crispy wings in record time.

Ingredients
- 1 pound chicken wings, mix of drumettes and flats
- Avocado oil
For the Dry Rub:
- 1 cup packed fresh flat-leaf parsley leaves
- ½ cup packed fresh cilantro leaves
- 2 sprigs of fresh mint leaves
- ½ cup extra-virgin olive oil
- 1 tablespoon shallot, coarsely chopped
- 1 red fresno chili, stemmed and seeded
- 2 garlic cloves, chopped
- ½ teaspoon ground cumin
- 1 tablespoon fresh oregano leaves
- 2 tablespoons red wine vinegar
- Kosher salt and freshly ground black pepper
For the Sauce:
- 1 tablespoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon cayenne pepper
- 1 teaspoon freshly ground black pepper
- 1 teaspoon sweet smoked paprika
- ½ teaspoon ground turmeric
- 2 teaspoons kosher salt
- 50 g brown sugar
- 60 mL white vinegar
- 354 mL bottle of hot sauce (Frank’s, if you have it)
- 4 tablespoons unsalted butter, cut into 4 pieces
For service:
- 1 bunch thinly sliced spring onions, just the greens
- 120 g crumbled blue cheese
- Blue cheese dressing
Directions
Step 1
Preheat the oven to 205°C on Air Fry.
Step 2
In a large bowl, mix together ingredients for the dry rub. Add in chicken wings and toss to coat. Drizzle in about 1 tablespoon avocado oil and toss to coat again.
Step 3
Arrange wings on the air fryer basket (note: this may require two batches). Place the air fryer basket in the top position with the bake pan in the bottom position. Cook for 10 minutes.
Step 4
Finally, turn the temperature to 220°C and cook for an additional 5 to 10 minutes,
until the wings are golden brown and crispy.

Step 6
While the wings are cooking, prepare the sauce. In your Mini Perfect Pot or Mini Always Pan, add all dry ingredients from garlic powder through brown sugar. Place on medium heat and stir for 1 to 2 minutes until the mixture gets very fragrant.
Step 7
Add in the vinegar and cook until bubbles appear. Add in hot sauce and bring to a simmer, stirring occasionally for 10 minutes. Turn off the heat and whisk butter in until it has fully melted and mixed in with the sauce.
Step 8
When wings are done cooking, place them in a large bowl. Drizzle with sauce and toss to coat. Sprinkle in some green onions and blue cheese crumbles, then toss again and place on a platter to serve. Add more green onion and blue cheese crumbles if you like. Serve with blue cheese dressing.
