Curried Cauliflower Soup with Naan Croutons

Velvety, spiced, and just the right amount of cozy, this curried cauliflower soup is the perfect bowl to warm you up. What You'll Need

Ingredients

  • 1 head cauliflower, cut into florets (about 4 cups)
  • 2 medium tomatoes, quartered
  • 1 medium sweet potato, peeled and diced (about 2 cups
  • 2 shallots, chopped
  • 3 cloves garlic, peeled
  • 1-inch piece ginger, peeled and finely chopped
  • 1 tablespoon garam masala
  • 1 teaspoon ground cumin
  • ½ teaspoon ground coriander
  • ½ teaspoon ground turmeric
  • ¼ teaspoon cayenne pepper
  • 4 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper
  • 4 cups vegetable broth

For the Naan Croutons

  • 2 naan or pita breads, cut into bite-sized pieces
  • Extra virgin olive oil

Directions

Step 1

Preheat the oven to 375°F.

Step 2

In a large bowl, toss the cauliflower, tomatoes, sweet potato, shallots, garlic, and ginger with the garam masala, cumin, coriander, turmeric, cayenne, olive oil, and a generous pinch of salt and pepper.

Step 3

Spread the vegetables in a single layer on the Large Griddle Pan. Roast for 30 to 40 minutes, or until the vegetables are tender and caramelized.

Step 4

Transfer the roasted vegetables to the Splendor Blender, working in batches if necessary, and blend with the vegetable broth until smooth.

Step 5

Pour the blended soup into the Mini Perfect Pot and heat over medium heat until it comes to a simmer. Adjust seasoning with salt and pepper to taste.

For the Naan Croutons

Step 6

Drizzle the naan or pita pieces with olive oil and toss to coat.

Step 7

Toast in the Always Pan over medium heat or bake in the oven until golden and crisp.

To Serve

Ladle the soup into bowls and top with naan croutons, a dollop of yogurt, chopped cilantro, and a squeeze of fresh lime.
